Coconut Oat Rounds

Over the snow days, I took some time to revamp my kitchen. Well, if we’re being totally honest it was my husband’s idea. The less stuff we can have, the happier he is — and I totally get it! Simple and minimal feels sooo good, especially when container lids don’t fly out at you from opening the cupboard. 

At home we’re trying more and more to eat what we have instead of rushing out to the grocery store on every whim and craving. I want to bake things if I want cookies, instead of buying processed foods. Today was like I discovered shredded coconut for the first time all over again. It helped get Bella to eat her breakfast and after I gave her some, I put a spoonful in my mouth. How did I forget how good coconut was?! Hence the reason for this coconut oat rounds recipe today.


I started by rounding up things in my pantry that I thought would work well together. There’s so many kinds of rollup balls you can make like this. I’ve seen them done with dates and cocoa, all types pf peanut butter, and dried fruits. 


I wanted them to be extra coconut-y so instead of regular flour or almond meal, I used coconut flour. If you’ve never used it or haven’t taken the time to smell it — it’s heaven. 

Next, I used my hands to roll all of the ingredients together, I found that the coconut flour is extra dry so I added in a splash of almond milk and just a dab of maple syrup. Your hands are going to get really sticky — and you’re going to love licking this stuff off your fingers.


Roll them up into about 12 rounds. 

These would also make great dog treats — sans the chocolate chips of course. I rolled one up for Bella and she loved it!


I set them in the freezer for about 20 minutes while Bella and I went to stomp around in the remaining snow. They came out delicious with just a hint of sweet. The perfect little snack to tide me over until dinner. 


I’ll be storing them in the fridge, although I’ve already went back to have more.


Bella and Dublyn have both been lazy buddies today. Dublyn still has another week in her cone from her dental surgery.

An easy, no bake recipe for a yummy vegan snack or treat

  1. 1/2 cup whole grain quick oats
  2. 1/2 cup shredded coconut
  3. 1 TBSP coconut flour
  4. 2 TBSP peanut butter
  5. 2 TBSP dairy free chocolate chips
  6. 1 TBSP maple syrup
  7. Almond milk as needed
  1. Add all ingredients to a medium size bowl
  2. Combine with hands until all dry ingredients are well mixed
  3. Roll into 12 rounds
  4. Place in freezer for 15-20 minutes or in fridge for 30 minutes
  5. Eat to your heart's content
  6. Store in the fridge
